The golden beaches of Goa stretch endlessly under a canvas of azure skies, while palm trees sway to the rhythm of the Arabian Sea breeze. This coastal paradise, where Portuguese colonial charm meets Indian exuberance has always been a melting pot of cultures, flavors and experiences. What better place to explore the vibrant world of tea cocktails than in a destination that celebrates life in all its colourful glory?

Goa's spirit is infectious – from the sunsets that paint the sky in shades of coral and magenta to the bustling spice markets bursting with turmeric yellows and chili reds. This kaleidoscope of experiences translates beautifully into the art of tea mixology, where traditional brewing meets modern bartending in a celebration of taste, aroma and visual appeal.

The Art of Tea Cocktails: A Symphony of Senses

Tea Cocktails

Tea cocktails represent more than just a beverage trend – they're a bridge between mindfulness and celebration, between the meditative ritual of tea preparation and the social joy of cocktail culture. In Goa's laid-back atmosphere, where time seems to move at the pace of gentle waves, tea cocktails offer the perfect balance of sophistication and relaxation.

The beauty of tea-infused cocktails lies in their complexity. Tea provides layers of flavor that spirits alone cannot achieve – the grassy freshness of green tea, the floral notes of hibiscus, the cooling sensation of mint, or the aromatic depth of lavender. When combined with Goa's local spirits like Feni or international favourites like Tequila, these botanical elements create drinks that are as visually stunning as they are delicious.

Recipe 1: Sunset Serenade (Green Tea with Hibiscus & Mint + Feni)

Inspired by Goa's magnificent sunsets and the state's signature cashew spirit

Green Tea Hibiscus Mint

Ingredients:

  • 2 cups water

  • 2 tsp Green Tea with Hibiscus & Mint blend

  • 2 oz Cashew Feni

  • 1 oz fresh lime juice

  • ½ oz agave syrup

  • 4-5 fresh mint leaves

  • Hibiscus petals for garnish

  • Crushed ice

Method: Begin by brewing a strong concentrate of the Green Tea with Hibiscus & Mint blend. Use hot water (175°F) and steep for 4-5 minutes to extract the full spectrum of flavors. Allow the tea to cool completely – this is your flavor base.

In a cocktail shaker, muddle the fresh mint leaves gently to release their oils. Add the cooled tea concentrate (about 3 oz), Feni, lime juice, and agave syrup. Fill with ice and shake vigorously for 15 seconds.

Double strain into a chilled coupe glass filled with fresh ice. The drink should have a beautiful ruby-pink hue from the hibiscus, reminiscent of Goa's sunset skies. Garnish with dried hibiscus petals and a sprig of fresh mint.

The result is a cocktail that captures Goa's essence – the earthy complexity of Feni balanced by the refreshing mint, while the hibiscus adds a tart floral note that mirrors the tropical blooms found in every Goan garden. The Sunset Serenade captures the vibrant energy of Goa's famous beach parties, where the sky transforms into a natural light show every evening. The deep coral and pink hues of the hibiscus mirror the dramatic sunsets over Anjuna or Vagator, while the mint provides the refreshing coolness of ocean breezes.

Recipe 2: Coastal Breeze (First Flush with Lavender & Lemongrass + Tequila)

A sophisticated blend inspired by Goa's aromatic spice gardens and Mediterranean influences

First Flush Lavender Lemongrass
First Flush Tea with Lavender Flowers and Lemongrass

Ingredients:

  • 2 cups water

  • 2 tsp First Flush with Lavender & Lemongrass blend

  • 2 oz Tequila

  • ¾ oz elderflower liqueur

  • ½ oz fresh lemon juice

  • ¼ oz honey syrup

  • 3 drops lavender bitters

  • Lemongrass stalk and dried lavender for garnish

  • Ice cubes

Method: Create a delicate tea concentrate using the First Flush with Lavender & Lemongrass blend. The first flush tea provides a light, almost ethereal base that won't overpower the delicate lavender notes. Brew at 185°F for 3-4 minutes, then strain and cool completely.

In a mixing glass, combine the cooled tea concentrate (about 3 oz), Tequila, elderflower liqueur, lemon juice, and honey syrup. Add ice and stir gently for 30 seconds to maintain the drink's clarity and delicate flavor profile.

Strain into a chilled Nick and Nora glass. Add three drops of lavender bitters and stir once to create subtle purple swirls throughout the drink. Garnish with a thin slice of lemongrass stalk and a few dried lavender buds.

This cocktail embodies the quiet moments spent in the beach gardens where the air is perfumed with memories and distant sails. With the Coastal Breezes, the Lavender dreams with its pale golden color and aromatic complexity, represents Goa's quieter moments – morning walks through Old Goa's colonial streets, the peaceful courtyards of Portuguese mansions, or lazy afternoons in spice plantations where the air is thick with the scent of cardamom and cinnamon.

Tips for the Perfect Tea Cocktail Experience

When crafting these cocktails at home, remember that tea is a living ingredient that changes with brewing time, temperature, and technique. The key is balance – allowing the tea's natural flavors to shine while complementing them with spirits and mixers that enhance rather than mask their complexity.

Consider serving these cocktails during Goa's golden hour, when the light is soft and warm, and the day begins its gentle transition to night. Use glassware that allows the colours to shine through, and don't forget the garnishes – they're not just decoration but aromatic elements that contribute to the overall sensory experience.

Whether you're dreaming of Goan beaches or actually sipping these cocktails with sand between your toes, these tea-infused creations offer a taste of paradise in every sip. They remind us that the best cocktails, like the best travel experiences, engage all our senses and create memories that linger long after the last drop is savoured.

Saúde! – as they say in Goa, where every sunset deserves a toast and every moment is worth celebrating.
